    The easiest rolls you'll ever make! These eight pieces are crispy outside and soft inside—perfect for baking every single day. No kneading required, and the whole wheat adds great flavor and texture.

    Ingredients

    • 230 ml water
    • 3 g fresh yeast(or 2 g dry yeast)
    • 220 g bread flour
    • 100 g whole wheat flour
    • 6 g salt

    Instructions

      Mix 230 ml water with 3 g fresh yeast (or 2 g dry yeast).

      Add 220 g bread flour, 100 g whole wheat flour, and 6 g salt. Mix until there's no more dry flour.

      Cover and let rest for 30 minutes.

      With a wet hand, stretch all 4 sides of the dough to the center and fold. Lift and slap back.

      Cover and rest for 30 minutes.

      Repeat stretch-and-fold. The dough is now much more elastic.

      Let rise until doubled in size, about 2 hours.

      Turn out the dough, fold to make it easier to cut. Divide into 8 equal parts by cutting into 4, then cutting each part in half.

      Pre-shape each piece: flatten gently, roll lengthwise, then fold into a ball and seal by rubbing against the work surface.

      Let rest uncovered for 10 minutes.

      Final shape: flatten the dough ball and press from the sides to tighten the surface. Then pinch to seal.

      Place on a baking tray in groups. Press and pinch to seal each roll for that cute little roll shape.

      Cover with a towel and let rise for 15 minutes.

      Lightly sprinkle flour over the rolls (a tea strainer works perfectly) and smooth with your hand.

      Score with a sharp blade to help them expand nicely.

      Sprinkle a few drops of water around the rolls, cover with another tray, and bake at 220°C for 20 minutes.
