    These are my pretzel rolls! Their crust is incredibly flavorful, and inside they are soft and delicious. The secret is the baking soda bath, which gives them that traditional pretzel taste and beautiful golden color. I use the easy "lift and slap" technique instead of kneading, and the dough is so easy to work with. The rolls are soft as a cloud inside with that distinctive pretzel flavor on the outside - perfect for sandwiches or enjoying fresh from the oven!

    Ingredients

    • 190 ml Water(¾ cup + 1 tbsp)
    • 3 g Fresh yeast(or 2g dry yeast (½ tsp))
    • 0.5 tbsp Honey
    • 320 g Bread flour(2½ cups)
    • 10 g Vegetable or seed oil(2 tsp)
    • 6 g Salt(1 tsp)
    • 500 ml Water(for baking soda bath (2 cups))
    • 20 g Baking soda(4 tsp)
    • Coarse salt(optional, for topping)
    • Melted butter(optional, for brushing)

    Step-by-Step Instructions

      Mix the dough: In a bowl, combine water (190ml), fresh yeast (3g) or dry yeast (2g), and honey (½ tbsp). Mix well until combined.

      Add dry ingredients: Add bread flour (320g), vegetable or seed oil (10g), and salt (6g). Mix until there's no more dry flour - just mix, no need to knead. Cover and let rest for 30 minutes.

      First stretch and fold: With a wet hand, stretch the 4 sides of the dough and fold them to the center. Lift the dough and slap it back using the "lift and slap" technique. Cover and let rest for 30 minutes.

      Second stretch and fold: Repeat the stretch and fold steps from before. Give it 4-5 slaps - that's more than enough! Cover and let rise until it doubles in size, usually about 2 hours.

      Divide the dough: Sprinkle flour on your work surface and fold the dough so it's easier to cut. You'll see beautiful bubbles! Cut into 8 equal parts - first divide into 4 parts, then cut each part in half.

      Shape into balls: Gently flatten each piece and fold into a ball. Rub against the work surface to seal. For longer pieces, roll twice and form into a ball. Let the balls rest uncovered for 10 minutes.

      Final shaping: Give each ball a quick fold to tighten the surface and pinch to seal. Place on a floured towel, cover with another towel, and let rise for 30 minutes.

      Prepare baking soda bath: In a pot, combine water (500ml) and baking soda (20g). Mix and bring to a boil. Turn on the oven to preheat to 430°F (220°C).

      Boil the rolls: Cook each roll in the boiling water for 30 seconds on each side. You can do two at once. Transfer to a baking pan.

      Score and season: Optional: Sprinkle a little coarse salt on top for the traditional look and taste. Score each roll with two parallel cuts using a sharp knife.

      Bake covered: Cover with another pan of the same size. Bake at 430°F (220°C) for 15 minutes. Remove the top tray and bake for 5 more minutes.
