    Quick 4-Ingredient Daily Bread

    Listen to that crust and look at that airy crumb—this is one of my favorite daily breads. I use a quick starter to build flavor fast, and the method is simple with no kneading required.

    Quick 4-Ingredient Daily Bread

    Ingredients

      Quick Starter

      • 120 ml water
      • 3 g fresh yeast(or 2 g dry yeast)
      • 120 g bread flour

      Main Dough

      • 100 ml water
      • 200 g bread flour
      • 6 g salt

      Instructions

        Mix 120 ml water with 3 g fresh yeast (or 2 g dry yeast) until dissolved.

        Add 120 g bread flour and mix until fully incorporated. You should get a very wet dough starter.

        Let the starter rise for 1 hour. The smell is amazing and so full of life!

        Add 100 ml water to the starter and mix.

        Add 200 g bread flour and 6 g salt. Mix until no dry flour remains—just mix, no kneading.

        Cover and let rest for 30 minutes.

        With a wet hand, stretch all 4 sides to the center, then lift and slap. This only takes about 15 seconds.

        Cover and rest for 30 minutes.

        Repeat stretch-and-fold. The dough is now much more elastic.

        Let rise until doubled, about 2 hours.

        Turn out the dough, fold to make it easier to cut, and divide in half.

        Pre-shape both pieces into tight balls and let rest uncovered for 10 minutes.

        Final shape: fold each piece to tighten surface tension, then place on a baking tray.

        Cover with a towel and let rise for 30 minutes.

        Lightly dust with flour (you can smooth it with your hand), score with a sharp blade, sprinkle a few drops of water around the bread, cover with another tray, and bake at 220°C for 20 minutes.

        Remove the top tray and bake 10 more minutes until as crispy as possible and golden.
