    This rustic sandwich bread is absolutely amazing! The addition of rye flour gives it incredible flavor and a beautiful color, while the yogurt makes it incredibly soft. It's perfect for making epic sandwiches and stays fluffy for days. What makes this bread special is the combination of bread flour and rye flour, along with yogurt which adds moisture and tenderness. The rustic flour dusting on top gives it that artisan bakery look!

    Ingredients

    • 160 ml Water(⅔ cup)
    • 60 g Plain yogurt(¼ cup, any yogurt will do)
    • 3 g Fresh yeast(1 tsp, or 2g dry yeast (½ tsp))
    • 1 tbsp Vegetable oil
    • 220 g Bread flour(1¾ cups)
    • 100 g Rye flour(¾ cup)
    • 6 g Salt(1 tsp)

    Step-by-Step Instructions

      Mix the dough: Mix water (160ml), plain yogurt (60g), fresh yeast (3g) or dry yeast (2g), and vegetable oil (1 tbsp). Add bread flour (220g), rye flour (100g), and salt (6g). Mix until there's no more dry flour - just mix, no need to knead. The color will be amazing! Cover and let rest for 30 minutes.

      First stretch and fold: With a wet hand, stretch the 4 sides of the dough and fold them to the center. This dough will be stiffer than usual dough, which is perfect for sandwich bread. Lift the dough and slap it back using the "lift and slap" technique. Cover and let rest for 30 minutes.

      Second stretch and fold: Repeat the stretch and fold process followed by lifting and slapping. Leave to rise until it has doubled in size, usually about 2 hours.

      Shape the loaf: Sprinkle flour on your work surface and fold the dough in half. Stretch the dough to form a long rectangle, then roll it tightly. Seal all edges by pinching them closed.

      Pan rise: Move the loaf to a greased loaf pan. Cover with a towel and let rise until it doubles in size.

      Score and prepare: Sprinkle a little water around the loaf (not on top). Dust generously with flour for a rustic look and smooth the flour with your hand. Score the bread lengthwise with a sharp blade or knife.

      Bake covered: Use the secret trick: cover with another loaf pan of the same size placed upside down. This creates steam and helps the bread rise beautifully. Bake at 430°F (220°C) for 25 minutes.

      Finish baking: Remove the top pan and bake for 10 more minutes until golden brown. The aroma will be amazing! Remove from the pan and cover with a towel to cool.
