    Crusty Bread Rolls

    Crusty Bread Rolls

    Ingredients

      Quick Starter

      • 100 ml water
      • 2 g fresh yeast(or 1 g dry yeast)
      • 100 g bread flour

      Main Dough

      • 120 ml water
      • 220 g bread flour
      • 6 g salt

      Instructions

        Mix 100 ml water with 2 g fresh yeast (or 1 g dry yeast) until dissolved.

        Add 100 g bread flour and mix until fully incorporated. You'll get a very liquid dough starter.

        Cover and let rise for 1 hour. It's full of life!

        Add 120 ml water to the starter and mix quickly.

        Add 220 g bread flour and 6 g salt. Mix until no dry flour remains—just mix, no kneading.

        Cover and let rest for 30 minutes.

        With a wet hand, stretch all 4 sides to the center, then lift and slap the dough back. This technique is super effective!

        Repeat stretch-and-fold. The dough is now much more elastic and smooth.

        Let rise until doubled in size, about 2 hours.

        Turn out the dough, fold to make it easier to cut, and divide into 6 equal parts.

        Pre-shape each piece: flatten gently, roll tightly, fold into a ball, and rub against the work surface to seal.

        Let rest uncovered for 10 minutes.

        Final shape: fold each piece to tighten surface tension, pinch to seal, and roll into a longer shape with your palm. Place on baking tray.

        Cover with a towel and let rise for 30 minutes.

        Lightly sprinkle flour over the rolls, score with a sharp blade, sprinkle a few drops of water, cover with another tray, and bake at 220°C for 20 minutes.
